Roblar Winery in Santa Ynez has it all.

The Roblar Winery and Vineyards estate includes a beautiful 5,000 square-foot tasting room, rolling vineyards, and state-of-the-art winery facility. They produce a wide variety of wines right here on the estate property, including 3 Sparkling Wines: Sparkling Brut, Blanc de Blanc, and Rosé Sparkling, all made in the méthode champenoise.
Méthode Champenoise is how sparkling wine is made in the Champagne region of France, also called méthode traditionnelle or classique. This is the highest-quality and most labor-intensive way to make sparkling wine. It involves bottling the still wine with additions of sugar and yeast after a first fermentation, ensuring a second fermentation happens in the bottle, trapping the bubbles inside. It then goes through aging (and periodic turning of the bottles to force the lees to the neck of the bottle), until it’s ready for dégorgement (to get these lees out) and dosage (to finish the wine).

Roblar makes their bubbly the traditional French way. The Blanc de Blanc is crisp and classy with just the right touch of citrus and toastiness. They also have Sparkling Rosé (Pinot Noir and Pinot Blanc), the kind of bottle you’ll want to bring to every brunch from now on.


Speaking of brunch—yes, they’ve got food, and yes, it’s awesome. The kitchen uses produce straight from their own farm (like, literally steps away from your table). Brunch is Sundays, Supper is Thursdays, and Lunch + Bites are available all the rest of the days starting at 11am.

This beauty takes 3 days to prepare and comes with all the fixings: cheddar cornbread, whipped butter, spicy honey, and a touch of lemon. This sparkling wine was produced by inducing in-bottle secondary fermentation and a minimum of 12 months of aging using the traditional méthode champenoise to create the tiny bubbles and complex flavors. It will continue to develop as it ages.”
