Downtown Paso Robles
1. Bushong
Make your own party with this sparkling Gewürztraminer, 2020 Faire La Fete, made in the classic Champagne method. These grapes are from the Adelaida district and the bubbly is aged en tirage, meaning the wine is aged on the yeast and lees (grape matter that is leftover from fermentation). This is also called late disgorged, since it’s aged longer than usual before disgorging the yeast plug and bottling. This process gives it a fuller body plus yeasty aromas, which blends with the fun, aperitif style of the Gewürztraminer grape. Perfect for a winemaker who loves vinyl and Duran Duran.
Méthode Champenoise is how sparkling wine is made in the Champagne region of France, also called méthode traditionnelle or classique. This is the highest-quality and most labor-intensive way to make sparkling wine. It involves bottling the still wine with additions of sugar and yeast after a first fermentation, ensuring a second fermentation happens in the bottle, trapping the bubbles inside. It then goes through aging (and periodic turning of the bottles to force the lees to the neck of the bottle), until it’s ready for dégorgement (to get these lees out) and dosage (to finish the wine).


2. CaliPaso
CaliPaso aims to deliver an authentic Italian experience right in Paso Robles—even importing Prosecco DOC directly from Italy. “DOC” stands for Denominazione di Origine Controllata, or “controlled designation of origin,” and represents one of the highest quality tiers of Prosecco, produced exclusively in regions like Friuli Venezia Giulia and Veneto. So you know it’s good.
3. Derby Wine Estates
Derby Wine Estates sits just beyond the walkable downtown, housed in a beautifully restored historic Almond Growers and Storage building—lovingly renovated by the Derby family. Their Sparkling Brut Rosé of Pinot Noir is crafted in the traditional Champagne method, resulting in an aged, nutty, and layered sparkling wine with impressive complexity.


4. Hayseed & Housdon/Metronome
Metronome – Track 2 is a Bubbly label by Hayseed & Housdon‘s right-hand woman, Holli Epperly, and this sparkling wine is her 2nd release. Metronome Track 2 is a traditional-method Extra Brut Cuvée, with crisp acidity and subtle fruit flavors, with minimal residual sugar. It can be purchased in the Hayseed & Housdon tasting room on Railroad, just behind the main row of Paso downtown businesses.

5. Hope on Park/Treana

Hope on Park is a downtown sidewalk tasting bar and creative space by Hope Family Wines. They make Treana Blanc de Blancs Sparkling Wine, in the Templeton Gap area just north of the 46 west highway. This Sparkling Brut is produced in the traditional méthode champenoise with notes of citrus and green apple. You can also visit the winery on Paso’s Westside!
6. Hoyt Wines
Hoyt Family Vineyards crafts an elegant Méthode Champenoise sparkling wine using Pinot Noir and Chardonnay sourced from select Central Coast vineyards. The Pinot Noir comes from their estate vineyard on Paso Robles’ westside, while the Chardonnay hails from the Lucas & Lewellen vineyard in San Luis Obispo County. The result is a crisp, refreshing sparkler with delicate notes of brioche and bright acidity.


7. Indigené Sparkling Wine
Yeux De Chat is Indigené’s take on traditional-method sparkling wine, made with fruit from the Santa Lucia Highlands and aged on the lees for several years. With just a 5g dosage, this Extra Brut Cuvée is crisp and focused, with bright acidity, a fine, gentle fizz, and a smooth, elegant finish that lingers nicely.

8. PasoSecco
PasoSecco is Paso Robles’ newest spot for bubbly! It’s the first and only winery crafting Charmat method sparkling wine using 100% Paso Robles grapes. Made entirely from Grenache Blanc, it’s classic, refreshing, and full of fun with a stylish twist.

9. Rockbound
Rockbound is a new boutique estate winery tucked away in the Adelaida District of Paso Robles, founded by Fiorella and Colby DeRodeff. Driven by a deep respect for terroir, they champion organic farming and vineyard stewardship to craft small lots of premium Bordeaux and Rhône-style wines. Each bottle is a true labor of love—including their Sparkling Pét Nat Rosé. This Pét Nat is a blend of Grenache, Cinsault, and Counoise.

Pétillant Naturel, or Pét-Nat, is an even more ancient way to make sparkling wine than the widely-used méthode champenoise (also called méthode traditionelle) originated in Champagne, France. In the méthode ancestrale, the wine is bottled with a crown cap before it even finishes its first fermentation, so it develops carbon dioxide as it goes. It’s not disgorged, often unfiltered, and can be made from any grape variety.
10. Tank Garage
Tank Winery first opened in an actual garage in Napa Valley, with the aim of celebrating rebels, punk rock, and California dreamin’. Now open in downtown Paso Robles, they showcase their fun labels, unique and rare blends, and never-to-be-drank again bottles (they never make the same wine twice). Ever the innovators, the folks at Tank Garage know how to have fun, especially with their Sparkling Pét Nats, this one, Skateland, made from 67% Barbera, 11% Chardonnay, 6% Grenache, 6% Mourvèdre, 5% Cinsault, and 5% Falanghina. And don’t miss their secret VIP room…shhhh!


11. Wine Boss
This cool wine bar specializes in crafting wines for reggae rock bands like Rebelution, offering a unique musical and wine-tasting experience. The tasting room features an art deco-themed, speakeasy-inspired lounge, creating a cozy and inviting atmosphere.
Wine Boss makes Sidequest’s 2023 Sparkling Rosé and Rebelution’s 2022 Sparkling Reb Rosé, both in cans, for on-the-go effervescence.
