San Miguel is a historic town just north of Paso Robles, and contains the northernmost vineyards in the County. There are 6 wineries in this area that produce sparkling wine. This area has a small-town, neighborly feel, and it’s an easy and laid-back trail. And if you ask, these wineries will most likely open a bottle for you to taste, so plan a day of it!

1. Four Sisters
Four Sisters is passionate about growing high quality, premium wine grapes and have two sparkling wines: a Sparkling Brut and a Brut Rosé, both made in the traditional method (not in-house). All of their wines can be found at their vineyard and winery on the Pleasant Valley Wine Trail in San Miguel.
2. Graveyard Vineyards
Graveyard Vineyards is a family owned winery based in Paso Robles Wine Country. You can taste their award-winning Red, White, Pink and Dessert wines at either of their California or Texas tasting rooms. While at the tasting room, enjoy a glass of their two sparkling wines: Ascender (blend of French Colombard and Chenin Blanc) and their Ascender Pomegranate! Both are slightly sweet and great with desserts. They are both made in the Champange method (not in-house).
3. Riverstar
Riverstar is a family-owned and operated vineyard and winery in San Miguel with 58 acres of grapes. Their sparkling wine is unique and on the sweet side: Shimmer Peach, a California Sparkling Wine made from 100% French Colombard with added peach flavor. It is a Demi Sec, made in the traditional method (not in-house). Taste it at the tasting room, or buy a glass or bottle!
4. Santellan
Santellan is Paso’s newest estate winery, located between Paso Robles and San Miguel, just off the 101 freeway. They have 3 Sparkling wines available: Brut Rosé Sparkling (Pinot Noir and Chardonnay), Symphony Sparkling white (white grape blend infused with lime), and Moscato Sparkling (semi-sweet). They are made in the Champagne method (not in-house) and are available to taste or buy.
5. Tackitt Family Wines
Tackitt produces a line of sparkling wines using grapes from their own vineyard, hence the name Domaine, which is French for estate. They pick the fruit very early in its development to ensure a lower sugar level, and use the champagne method to attain high quality sparkling wine. They make a 2021 Sparkling Gewurztraminer, which was left on the lees for over a year, and a 2022 Sparkling Rosé.
6. Vino Vargas
Vino Vargas is nestled in the rolling hills of the Northwest Paso Robles region, and is one of the few wineries in the County that produces classic-style, méthode champenoise sparkling wine, 100% in-house. Winemaker Pedro Vargas produces 3 sparkling wines here: Brut Blanc de Blanc (méthode champenoise), Brut Blanc de Noir (méthode champenoise), and Brut Rosé Sparkling (méthode champenoise).
Méthode Champenoise is how sparkling wine is made in the Champagne region of France, also called méthode traditionnelle or classique. This is the highest-quality and most labor-intensive way to make sparkling wine. It involves bottling the still wine with additions of sugar and yeast after a first fermentation, ensuring a second fermentation happens in the bottle, trapping the bubbles inside. It then goes through aging (and periodic turning of the bottles to force the lees to the neck of the bottle), until it’s ready for dégorgement (to get these lees out) and dosage (to finish the wine).
All of their wines can be enjoyed during a personalized wine tasting experience with their winemaker or sommelier by appointment only.
