Paso’s Eastside
1. Barr Estate Wines
Barr Estate Winery is a small family owned and operated vineyard, boutique winery and tasting room located on the east side of Paso Robles in the Geneseo District. Many varieties are grown on their 57 acre vineyard and crafted into their single-vineyard estate wines. Barr also produces Sparkling Albariño (made in the traditional méthode champenoise) that can be enjoyed, along with their other wines, at their tasting room by appointment only.
Méthode Champenoise is how sparkling wine is made in the Champagne region of France, also called méthode traditionnelle or classique. This is the highest-quality and most labor-intensive way to make sparkling wine. It involves bottling the still wine with additions of sugar and yeast after a first fermentation, ensuring a second fermentation happens in the bottle, trapping the bubbles inside. It then goes through aging (and periodic turning of the bottles to force the lees to the neck of the bottle), until it’s ready for dégorgement (to get these lees out) and dosage (to finish the wine).
2. Bianchi
The Bianchi Winery is the culmination of 3 generations’ dreams of creating wine in Central California. Their winemaking facility makes it possible for the winery to create limited production wines, and the barrel room allows blending and aging in small lots. At their tasting room on the estate, you can taste their Signature Sparkling Wine.
3. Brochelle
Brochelle has been producing wine for the past 20 years. They care deeply about every step of the process – from pruning, harvesting, bottling and absolutely everything in between. Their wines range from Zinfandel to Cabernet to Chardonnay and more. Brochelle’s two bubbly wines, Brochelle Bubbles (Brut-style Blanc de Blanc) and Brochelle Rosé Bubbles tend to sell out, but can sometimes be available during the holidays at their tasting lounge.
4. Cass
This boutique award-winning winery is situated along the beautiful Paso Robles ‘Back Roads’ countryside, and features 100% estate-grown Rhone and Bordeaux wines. Cass also produces two sparklers- Cuvée de Rosé and Sparkling Viognier. Their Bubbles tend to sell out quickly, so good luck getting your hands on them!
5. Fableist
The Fableist Wine Co. is located east of the town of Templeton in the El Pomar AVA of Paso, and creates unique blends inspired by Aesop’s Fables. Fableist has one sparkling – their Blanc de Blanc (traditional méthode champenoise) made with 100% Chardonnay. They make the wine here in Paso Robles.
6. Le Vigne
Le Vigne is rooted in family history. The winery’s varietals include: Merlot, Syrah, Sangiovese, and Cabernet Franc in addition to the original plantings of Cabernet Sauvignon and Chardonnay. And after the success of their Rosé of Sangiovese, Le Vigne now produces a Sparkling version, their Blanc de Noir (traditional méthode champenoise).
7. Paris Valley Road
Paris Valley Road is an estate winery and vineyard in the heart of Paso Robles, inspired by the stunning domaines of the grand crus of France. They mainly focus on Bordeaux varietal and blending techniques which can be enjoyed through their wines. At their tasting room in Paso Robles, enjoy a glass of their Sparkling Wine (traditional method) made from Grenache Blanc while taking in the beautiful scenery.
8. Rava
The Rava family dreamed of being the first Paso Robles winery to specialize in estate grown, sparkling wines crafted in the time-honored, méthode champenoise style. The hand-crafted nature of these wines is reminiscent of the old-world traditions found in the smaller grower champagne houses. Rava Wines offer a variety of Still and Sparklings such as Grenache Rosé, Blanc de Blanc, Brut, Albariño and more! Head on over to their tasting room east of Paso Robles to taste their lineup of sparkling wines.
Rava Wines created 10 sparkling wines to enjoy -Sparkling Grüner Veltliner, Negro Amaro, Alabariño, Solstice, Riesling, Lunare, Brut, Blanc de Blancs, Blanc de Noir, and Grenache Rose. All of Rava’s Sparkling Wines are crafted using time-honored méthode champenoise techniques.

9. Robert Hall
Robert Hall produces award-winning wines that represent the pillar of the vibrant and premier Paso Robles winemaking region, and express the spirit of the valley. Their estate-grown varieties have big, bold characteristics and their wines are crafted with rich, complex flavors. At Robert Hall’s tasting room in Paso Robles, you can taste the Sparkling Grenache Blanc!
10. San Antonio/Stella Rosa
San Antonio Winery remains the oldest and largest producing winery in Los Angeles with over 100 years of winemaking, making it an essential component of the city’s cultural and historical landscape. Aside from their LA location, they also have tasting rooms in Paso Robles and Ontario. San Antonio Winery offers wines from light, sparkling whites to earthy, dark reds. Through their Stella Rosa collection you can discover many of their sweet sparkling wines.
Through the Stella Rosa brand, there are 11 Sparkling wines to enjoy including 1 non-alcoholic: Cranberry, Cranberry Non-Alcoholic, Imperiale Brachetto d’Acqui DOCG, Imperiale Moscato, Imperiale Moscato Rosé, Imperiale Orange Moscato, Imperiale Prosecco, Imperiale Prosecco Rosé, Imperiale Rosso Lux, Asti, and Imperiale Black Lux.
11. Sculpterra
Sculpterra Winery & Sculpture Garden is so unique as they combined art and wine. While visiting their winery estate, tour and picnic in the sculpture garden and view the life work of renowned sculptor John Jagger. Sculpterra is known for their Cabernet Sauvignon and Bordeaux-style blends to Estate Viognier, Pinot Noir, Primitivo, Cabernet Franc, Mourvedre, and Petite Sirah. They also produce a Sparkling Wine (made by méthod charmat) that is a must try when visiting their winery.
12. Steinbeck
The Steinbeck 2021 Blanc de Blanc is made from Sauvignon Blanc grapes in the Methode Traditionelle, in the Brut fashion.
13. Still Waters
Still Waters is a small production vineyard that sells grapes to wineries throughout the state. They bottle more than 20 different varietals and don’t sell in stores, however you can try their wines at their tasting room. Some wines they produce are Cabernet Franc, Cabernet Sauvignon, Cuvee, Grenache, Chardonnay, Rosé and many more! At their tasting room, enjoy a glass of their Sparkling Brut Rosé made of Grenche and Malbec.
14. Tobin James
Located eight miles east of Paso Robles on Highway 46, Tobin James Cellars sits among 71 acres of vineyards and oak dotted hills. Their old-fashioned western-style tasting room saloon embraces the rough and rugged frontier history of Paso Robles, California. Tobin James produces a wide variety of red, white, rosé, and dessert wine. Among those Tobin James has a Sparkling Wine called Dream Weaver made with Chardonnay, Chenin Blanc, and a bit of Moscato.
15. Vina Robles
Vina Robles owns and farms six estate SIP® Certified Sustainable vineyards in five sub-districts within the Paso Robles wine region. They produce distinctive red, white, dessert and Sparkling Wines. At their tasting room in Paso Robles, enjoy a glass of their Brut or Brut Rosé both made with traditional méthode.

16. Chateau Margene
Most wines produced under the Chateau Margene umbrella focus on low-yield grapes grown on the estate or sourced from sustainable wine grape growers in the Santa Lucia Highlands and Paso Robles. Their Mooney Family Blanc de Noir Sparkling Wine is made in Sonoma can be tasted at their estate vineyard and winery in Creston, or at their tasting room on the Embarcadero in Morro Bay.
